Potato Greek (leek) Soup

I love to make potato leek soup, especially when I have homemade chicken stock. It is so very nourishing and filling. Evan calls it "potato Greek soup"! I made a whole pot of stock on Friday; it cooked for a good 22 hours! I had the boys help me make soup tonight. I have two little chefs on my hands. Evan especially loves to cook. I had Ethan help me monitor the leeks as they sauteed in the pan:

While he was doing that, Evan was peeling potatoes. He got tired of that after awhile and handed the job over to Ethan. I couldn't figure out what Ethan was doing wrong. He was having such a hard time and kept gouging and dropping the potatoes. I finally got a close look and realized he was trying to use the peeler from the side! Oops! So after a little better instruction, he figured it out and was a lot happier to help peel potatoes!


This is what homemade chicken stock looks like... very dark and rich in minerals that have been cooked thoroughly out of the bones!

We also made homemade bread to go with our soup. You can't really have potato leek soup without good bread. Funny, Mike got home and the first thing he said was, "I'm so mad. I stopped at Albertson's specifically to get some French bread and I forgot to get it!" So I showed him the rising loaf and said, "Well it's a good thing I'm making some!" Yay! Dinner was delicious!

  2. Um yeah... there is plenty I can't do! LOL... My husband will tell you what a bad, bad housekeeper I am! That one is HUGE. I need to get back to FlyLady... she really does help you stay organized!
